Why do people shake their hands when playing string instruments?
That shaking movement is a technique called vibrato, that makes the violin go slightly sharp and flat repeatedly. This process of sharps and flats make the violin sound more like a human voice.

Violinists, like guitarists get into their music and can't act like zombies or robots all the time.. The movements, though unsimilar to what a guitarist or drummer does is none the less a reaction of their personal achievements (perfect licks, notes, etc.) while performing.
